So can we please put to bed the myth that UP/DOWN is always towards/away from Ipswich (or Roma St)?

I've gotten sick of countering that one!

In general, the UP direction in QLD is best remembered as "Cairns to Cunnamulla", with rare exceptions like the Kingaroy branch.

Thus Roma St toward anywhere south & west (Cleveland, Gold Coast, Toowoomba) is UP.  Roma St toward anywhere north (Ferny Grove, Shonncliffe, Cairns, Doomben, etc.) is DOWN.

The location where through trains mostly commonly switch UP/DOWN designations in Brisbane is the Dutton Park to Buranda leg of the junction at Park Rd (and dual gauge flyover), where any train going to the Port of Brisbane from Acacia Ridge or out west switches from being a DOWN train at Dutton Park to an UP train at Buranda.

One assumes UP and DOWN are relevant to the Station order they are placed on the left side of the Train Control Graph from top to bottom. So if Roma street is at the top, then all stations bellow that are DOWN from Roma Street on that Graph. Where Roma Street is on the bottom of a different Graph, the other stations on same Graph are in the UP direction from Roma Street. Correct me if I am wrong.

Things get confusing on the coal system too. UP trains normally travel on the DOWN track when compared to pre bi-directional double line working.
